A complex and demanding vintage
The first months of winter were characterized by warmer weather and lower rainfall than usual for the time of year. This situation was reversed thanks to the abundant rains that arrived at the beginning of the year. Budding occurred uniformly in mid-April in the context of a dry spring with some episodes of frost that affected part of the vineyard. In the management of the vineyard, which is organic, efforts were focused on the management of plant cover and phytosanitary control. During the summer, dry and warm conditions, together with a heatwave at the end of August, caused the grapes to ripen earlier than usual. The average annual temperature was higher than normal with a change in the Winkler zone. Before the harvest began, there were several episodes of heavy rain, which complicated the decision-making process prior to picking the fruit. Finally, the harvest of this plot took place on September 23.

The Salas plot takes root beneath the mountainous terrain of the Sierra de Toloño. A vineyard dating back to 1911, it is home to vines of up to 25 different varieties: Tempranillo, Garnacha, Graciano, Benedicto, Viura, Mazuelo, Garro, and Maturana Tinta, among others. These century-old vines, thanks to their natural vegetative balance, allow for more respectful viticulture, with more balanced yields and better adaptation to the environment. These characteristics, together with the heterogeneous, loamy-silty soils with a high limestone content and the microclimate generated by the influence of the mountains, give Salas a unique character, particularly favorable for the harmonious ripening of the raw material.

The grapes from the century-old vineyard in Salas were harvested by hand after exhaustive monitoring throughout the ripening cycle. Once in the winery, the raw material is moved by gravity and vinified separately with spontaneous fermentation, gentle and short extractions, and strictly controlled temperatures in concrete tanks. During aging, the wine was refined for 19 months in French oak barrels of different sizes. After the final blending, aging continued for one month in French oak casks. For added protection, the wine contains sulfites. It was bottled in the spring of 2025.
