Authenticity and essence

Authenticity and essence

Its orography is a climatic crossroads where continental and Atlantic conditions intermingle. The vineyards are mainly Tempranillo with some Graciano, Garnacha, white varieties and other unknown varieties. The expression of each plot remains intact until the end of the aging process. The final blend defines the authenticity and viticultural essence of Leza.

The Sierra de Toloño mountain range bears witness to the landscape that has been forged under its influence. Small vineyard plots with clonal biodiversity and different degrees of sun exposure and orientations that favour a gradual ripening of the grapes. Its mountainous orography acts as a natural barrier to protect the Leza wine-growing area from adverse weather conditions. Loamy loam soils with a high limestone content and a good amount of organic matter. Aiurri 2021 is a wine from the municipality of Leza. The assemblage of six plots: Vallejón, Espino, Losares, San Andrés, Guardaviñas and Viejete, which are worked individually in order to transmit the best of each vineyard and environment.

Winemaking per plot

Winemaking per plot

The Aiurri 2021 grapes were harvested by hand after an initial selection of bunches in the vineyard. Later, in the winery, a double selection was made: of clusters and berries. Gravity must production allows us to respect the raw material as much as possible and vinification by plots allows us to give the wine the particular characteristics of each environment. We work with the utmost respect with spontaneous fermentations and gentle and very controlled extractions in French oak vats and concrete tanks. Aiurri 2021 was aged for sixteen months in French oak barrels of different sizes. After the blending of plots, the wine was aged in concrete tanks for three months. For further protection the wine contains sulphites. Finally, it was clarified with natural egg whites and bottled in the spring of 2023.
